The organic extra-vergine olive oil is producted from olives of
the 750 olive-trees of the farm.
We pick the olives by hand, with
big nets under the plants, in the Autumn time (November-December).
Then we make the olive oil at the "frantoio" and we store the
olive-oil in terracotta big vases called "coppi", we store it in a
dark and fresh cellar.
